Shred the 1 red onion, 1/2 chinese cabbage and small bunch of radishes in the food processor
Put in a bowl to one side
Whizz the fresh coriander and chilies in the food processor
Peel and crush in the 2cm piece of ginger
tip into the bowl with the cabbage mix
Squeeze in the juice of 2 limes
Add a pinch of salt and a splash of sesame oil
Mix and scrunch together with your hands really well
Taste and amend flavours as required
